Christmas Eve Eve

While Jen absconded to her family’s home in sunny California, I decided to host a little holiday dinner for the friends who were still in New York. Most of the dishes had been featured in this blog before, some were new. I baked a cake for the first time in probably a decade. And a couple of friends contributed some appetizers. Thanks to them for the assist. So here is a rundown on what we feasted on. Happy Holidays!

Herb-Crusted Rack of Lamb with Honey Mustard Glaze

Russian Home Style Potatoes

Roasted Brussels Sprouts with Crispy Shallots

Portobello Caps (thanks to iPav who brought this amazing app over)

Cauliflower Steaks with Olive Relish and Tomato Sauce

Baked Camembert (idea for this was also borrowed from iPav)

Chilean Salsa on Baguette
Chancho en Piedra, or Chilean Salsa, is very similar to Pico de Gallo, with the addition of the Chilean Mapuche seasoning mix called Merkén.  The seasoning is hot and aromatic using a combination of dried smoked Cacho de Cabro (“goat’s horn”) pepper, salt, cumin, and coriander seeds.

Spaghetti Squash with Meat Sauce (sorry only photo is in the table photo below!)

Bûche de Noël
Our dessert; we also had cookies, but I failed to take photos of those, so apologies for that.

Holiday Feast!
