Bourbon and Honey Caramel Corn Mix


This light and sweet snack mix is an update to the original classic, Gerry’s Caramel Corn mix. Adding bourbon, honey and soy sauce are my favorite things to bake / cook with nowadays and I love how they bring some subtle new flavors here. To make this recipe vegan, simply switch out the honey for brown sugar and butter for margarine or other alternative.

Ingredients:

6 C popped popcorn

2 C Cheerios

3 C Rice Chex

1/2 C butter or margarine

1/2 C coconut oil

1/2 C brown sugar

1/2 C honey

1/4 C Karo Syrup Light

1 tsp soy sauce (gluten-free)

1/4 C bourbon whiskey

1/2 tsp vanilla extract

1/8 tsp baking soda

Directions:

  1. Preheat oven to 250 degrees F.
  2. Mix popcorn, Cheerios and Rice Chex in large container.  Set aside.
  3. Use deep pot & boil margarine, coconut oil, brown sugar, honey and Karo syrup for 5 minutes, stirring so as not to burn mixture.  Remove from heat and stir in vanilla, soy sauce, bourbon and baking soda.
  4. Pour caramel mixture over cereal mix.  Stir well to distribute caramel throughout mixture.
  5. Bake 1 hour at 250 degrees.  Stir occasionally every 15 minutes.  Remove and cool completely.  Break apart and store in a tightly covered container.  Enjoy!
