Coffee Cake Banana Bread


A classic banana bread recipe topped with a cinnamon sugar crumble turns your banana bread into coffee cake!

Fun Fact: Did you know that coffee cake does not have any coffee in it? I never really thought much of it until I looked into the recipe. The American coffee cake term started in 1897 because it was the perfect complement to a cup of coffee. It is a sweet pound cake layered with a cinnamon sugar streusel / crumb topping.

As quarantine baking continues, I decided to stop tossing my bad bananas into the garbage and try making banana bread. It’s way easier than trying to make sourdough bread, which I have yet to take on. Bake yourself a loaf this weekend and enjoy breakfast for the week, or just finish the whole thing in a day or two, also perfectly OK.

Coffee Cake Banana Bread

  • Prep time: 10 minutes
  • Cook time: 55 minutes
  • Yield: Makes one loaf

INGREDIENTS

  • 2 to 3 very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
  • 1/2 cup butter (melted) or oil of choice
    (coconut, applesauce, avocado, butter/ghee), melted/softened
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 to 2/3 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/4 cup walnuts (optional)

    Cinnamon crumble:
  • 2 tbsp melted coconut oil
  • 3 tbsp flour
  • 6 tbsp org cane sugar
  • 1 tsp cinnamon

METHOD

1. Preheat the oven to 350°F (175°C), and butter a 4×8-inch loaf pan.

2. In a mixing bowl, mash the ripe bananas with a blender or fork until completely smooth. Stir the melted oil into the mashed bananas.

3. Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

4. Make the cinnamon crumble mixture:
To a small bowl, add 2 tbsp melted coconut oil + 3 tbsp flour + 6 tbsp org cane sugar + 1 tsp cinnamon

5. Pour the batter into your prepared loaf pan. Crumble the cinnamon evenly on top rack for 50 minutes to 1 hour at 350°F (175°C) or until toothpick comes out clean.

6. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.
