Strawberry Orange Pasta Salad
I first tried this at my cousin’s place; she had made it for her son’s 7th birthday party in August. It was a fantastic summer pasta salad and a crowd-pleaser amongst the picky kid eaters and adults alike. It tasted very refreshing and the combination of mandarin oranges and strawberries was great! Ok, so the fruit can be misleading because it really isn’t the healthiest pasta salad ever but it’s a recipe from Kraft… what else would you expect? Just focus on the healthy fruit aspect and let your taste buds enjoy themselves 🙂
I did put a scant less of mayo and more strawberries, which helped my healthy kick slightly…
Strawberry Orange Pasta Salad (adapted from Kraft recipes)
Prep time: 30 min
Total time: 30 min
Yields: 4 servings, 1 cup each
Ingredients:
- 2 cups Farfalle (bow-tie pasta), uncooked
- 1/3 C Creamy Poppyseed Dressing
- 1/4 C lite mayo (minus 1 tablespoon)
- 1/4 C sliced green onions
- 1 can (11 oz.) mandarin oranges, drained
- 1 1/2 C strawberries, sliced
Directions:
Cook pasta as directed on package; drain. Cool.
Mix dressing and mayo in medium bowl. Add pasta and onions; toss to coat. Gently stir in fruit.
Serve immediately or cover and refrigerate until ready to serve.
