Peanut Butter and Banana French Toast
Yields: 1 sandwich

  • 2 eggs
  • 1 dash vanilla extract
  • 1 dash cinnamon
  • 1 teaspoon sugar
  • 1/4 Cup milk
  • 2 tablespoons creamy peanut butter
  • 2 slices bread
  • 1 small banana, sliced
  • 2 teaspoons butter, or as needed

1. In a medium bowl, whisk together eggs, milk, vanilla extract, sugar and cinnamon. Pour into a flat pan or tupperware for dipping bread.

2. Slice banana and place slices on one piece of bread. Spread peanut butter on the piece. Put the two pieces together to make a sandwich.

3. Dip sandwich into egg mixture, flip to coat both sides.

4. Melt butter on saucepan under  low heat. When butter is melted, place sandwich onto saucepan. Cook on both sides for a couple minutes or until bread is golden brown.

5. Remove from heat. Serve with maple syrup or powdered sugar. Enjoy!
