Mango Salsa


 

We made this to spice up our usual shrimp taco routine, which we normally serve with store-bought salsa.  I absolutely adore mangoes and I had been wanting to make my own mango salsa for a while now.  It was a very tropical and refreshing addition to our Shrimp Tacos.

Mango Salsa

Yields: 4 servings

Ingredients:

  • 1 ripe mango, pitted, diced
  • 1 ripe avocado, pitted, diced
  • 2 tomatoes, seeded and diced
  • 1/2 red onion, diced
  • 2 cloves of garlic
  • Handful of chopped cilantro
  • Salt to taste
  • Ground black pepper to taste
  • Crushed red pepper flakes to taste
  • Hot sauce to taste
  • Lime juice

Directions:

Toss the mango, avocado, tomatoes, red onion, garlic, salt, pepper, crushed red pepper flakes, hot sauce, lime juice and cilantro in a bowl.  Cover and refrigerate until needed.

Try serving with Shrimp Tacos!
