Mini Caprese
Insalata Caprese is a simple Italian salad made of mozzarella, tomatoes, and basil. When you downsize all the ingredients to bite-size form, you get the perfect party appetizer that is both refreshing and, well, really cute. I prefer to keep my Mini Caprese salad skewers very simple; I use the same olive oil + balsamic vinegar + salt + pepper dressing as I do for the big version. The only embellishment I add is sun-dried tomatoes, which normally are packed in oil with tons of herbs that really enhance the flavor of the salad.
Mini Caprese
Ingredients:
- long toothpicks (at least 3″ is ideal)
- cherry tomatoes
- bocconcini (mini mozzarella balls)
- sun-dried tomatoes
- whole basil leaves
- olive oil
- balsamic vinegar
- salt and freshly ground pepper to taste
Directions:
Assemble each skewer with a cherry tomato, whole basil leaf, bocconcini, and sun dried tomato. Feel free to get creative with the assembly order.
In a shallow dish, drizzle equal parts of olive oil and balsamic vinegar and sprinkle with a dash of salt and pepper. Give each skewer a light roll in the dressing to season according to your preferences. Enjoy!
