Watercress, Avocado and Orange Salad
I came across this salad recipe in an issue of the Food Network Magazine and thought it sounded amazing. The refreshing, fruity flavors came together quite well and it was super quick and easy to make. I especially loved the homemade citrus dressing with orange juice lime, honey, and dijon mustard. We served this salad as a starter to our Cajun Chicken with Pineapple and Mango Salsa to complete a very refreshing and fruity meal!
Watercress, Avocado and Orange Salad (courtesy of the Food Network)
Yields: 6 servings
Prep Time: 15 minutes
Ingredients:
- 1/4 red onion, thinly sliced
- 1/4 C orange juice
- 1 lime, juiced
- 1 T honey
- 2 T dijon mustard
- 1/2 tsp salt
- 1/4 tsp black ground pepper
- 3 T olive oil
- 2 bunches watercress
- 2 avocados, sliced
- 2 oranges, segmented
- 1 C hazelnuts, chopped and toasted
Directions:
Soak the thinly sliced red onion in cold water for about 10 minutes.
Whisk the orange juice, lime juice, honey, dijon mustard, salt, and black ground pepper together in a medium bowl. Pour the olive oil into the bowl in a slow, thin stream, and continue whisking.
Drain the red onion. In a large bowl, toss the watercress, red onion, avocado slices, orange segments, and the dressing together. Top with chopped toasted hazelnuts.
