Spicy Pineapple Fried Rice


My cousin Rose likes to make this for her family and I finally got around to testing this out. I was surprised that this fried rice did not call for eggs, but taste delicious nonetheless. the crushed red pepper really adds a little kick to the flavor, and the sweetness of the pineapples really go well with saltiness of the soy sauce. It may sound like an odd group to some, but believe me it is a winning combo!

Spicy Pineapple Fried Rice

Adapted from my cousin who got this recipe from www.txbeef.org

Prep: 10 minutes

Cook: 4 minutes

Yields: Serves 4

Ingredients:

  • 1 can (8 to 8 1/4 oz) crushed pineapple in syrup (save the syrup for added sweetness later)
  • 2 T vegetable oil
  • 2 cloves garlic, crushed
  • 1/8 – 1/4 tsp crushed red pepper
  • 3 Cups cold cooked rice
  • 1/4 Cup soy sauce
  • 1/4 cup sliced green beans
  • 2 chicken-apple sausages from Costco
  • 1/4 cup cooked frozen peas

Directions:

1. Drain Pineapple, reserve 1/4 cup syrup and set aside

2. In a large nonstick skillet, heat oil over medium-low heat until hot. Add garlic, ginger and red pepper, cook and stir for 2 minutes. Increase heat to medium-high. Add rice and soy sauce; cook 2 minutes, stirring frequently, add the rest of ingredients. Then add a few teaspoons of pineapple syrup to taste.

3. Serve and enjoy!
