Insalata Caprese

Simple and refreshing salad!  We also like to make mini caprese salads using cherry tomatoes and bocconcini (the smaller fresh mozzarella balls).  You can stick them together with toothpicks and it is a great appetizer to bring to parties!

Insalata Caprese


  • 4 Roma tomatoes, sliced 1/4 inch thick
  • 1 lb fresh mozarella, sliced 1/4 inch thick
  • 1/4 C packed fresh basil leaves
  • 1/4 tsp dried oregano
  • 1 T extra virgin olive oil (EVOO)
  • 1 T balsamic vinegar
  • Salt and ground black pepper to taste


On a large platter, arrange the tomato slices, mozzarella slices, and basil leaves to alternate on top of one another.  Sprinkle the salad with the oregano, salt, and ground black pepper.  Drizzle with EVOO and balsamic vinegar.
