Marinated Mushrooms


I found this recipe off my favorite Allrecipes.com website when I was searching for a variety of appetizers to make for an “indoor picnic” my flatmate and I were hosting.  Everyone loved this zesty mushroom dish, and I didn’t have to make any changes to the original recipe as it was perfect as it was!  The only difference is that the second time I made it, I was too impatient to wait for it to chill and I ate it right away.  As a result, I think this dish is delicious served warmed or chilled!

Marinated Mushrooms (by Cristi Zbella)

Yields: 4 cups

Ingredients:

  • 1/3 C red wine vinegar
  • 1/3 C olive oil
  • 1 small onion, thinly sliced
  • 1 tsp salt
  • 2 T dried parsley
  • 1 tsp ground dry mustard
  • 1 T brown sugar
  • 2 cloves garlic, peeled and crushed
  • 1 lb small fresh button mushrooms (or use regular mushrooms and halve them)

Directions

In a medium saucepan, mix red wine vinegar, olive oil, garlic, onion, salt, parsley, dry mustard, brown sugar and garlic.  Bring to a boil.

Reduce heat and stir in mushrooms.  Simmer 10 to 12 minutes, stirring occasionally.

You can either serve warm or transfer to sterile containers and chill in the refrigerator before serving.

    I cooked these in my Actifry and they were amazing! Added the onions and all the ingredients except for the mushrooms for 6 minutes and then added the mushrooms for another 9 mins. LOVELY! Thank you!
